The variety of quince has been almost forgotten, even if today is celebrated for its remarkable flavor. In ancient orchards of the Lower Rhine and Münsterland survived some old quince “stocks”. The fruits of these trees are now tastier than ever. The bouquet is complex with aromas of ripe lemons and pears, candied ginger, a pinch of jasmine, anise and lemon balm. The palate shows at the beginning a fine sweetness, ending in a pleasantly dry finish.
